Summer Melon Board
It’s that time of year again - melon season!
This is a super simple recipe perfect for summer gatherings. The PNW is finally getting some heat and I made this board for a few friends this past week.
To make this board, I went to Trader Joe’s and purchased a honeydew, tuscan cantaloupe, a yellow and red watermelon. I served it with honey yogurt dip, which I made with 1 cup of Greek yogurt, 1 TBS Manuka honey, and 1 teaspoon of vanilla bean paste (from Trader Joe’s). I’ve also used vanilla extract. I topped the honey yogurt dip off with a drizzle of honey and served it with my Swedish butter knife. To finish off the board, I added some herbs from he garden, including thyme, basil, and mint. Next time I think I’ll chop the herbs up more and sprinkle on the fruit. Lastly, I served with a honeycomb from Whole Foods.
This was a very easy and fancy looking appetizer board for friends the other day and made for a perfect snack on a hot summer day.
